Crockpot Recipe - Salsa Chicken

I found this recipe at Lauren's Kitchen, and I decided to give it a try. We're always rushing on Monday evenings, so it's nice to have something ready to eat when I get home from work. I especially love that the recipe calls for FROZEN chicken breasts. How much easier can it be? My husband said we need to have chips with it next time, because it needed a little crunch. I guess that means he liked it!

Crockpot Salsa Chicken
  • 4 boneless skinless chicken breasts, frozen
  • 1 envelope of taco seasoning
  • 1 cup fresh salsa
  • 1 can of cream of mushroom or cream of chicken soup
  • 1/2 cup sour cream
Place chicken in crockpot. Sprinkle taco seasoning over the chicken. In a bowl, combine the salsa and the soup, pour over chicken. Cook on low for 6 to 8 hours. Just before serving, stir in the sour cream. Serve with rice or tortillas.

I didn't have any fresh salsa in the fridge, so I just used what I had in a jar in the fridge. I think fresh would've made it better, so I'll make sure I make some up to use when I want to have this again. I used cream of mushroom soup, because we like mushrooms at our house, and I used reduced fat sour cream. I served it over steamed white rice, and I added corn and black beans to the rice because I thought it sounded good. I sprinkled some shredded colby jack over the top and added a spoonful of sour cream. Yum!

Bringing Flower Punches to Life

I belong to a card club called Stamp 'N Nutz. We meet once a month, and each month there is a demonstration where we learn a new technique. Yesterday we learned what to do with flower punches to make them more exciting. Instead of just putting flat embellishments on the page, we did a couple of tricks to make them look 3D and layered them for a really neat effect. And, we got enough punched flowers to bring them home and play around some more, so that's what I did. Here are the finished cards...








I just love this idea! Now I need to get some flower punches...I only have a few small ones right now. I think out of everything I made, my favorite was the tag with the flower 'topiaries.' The leaves and the flower pots are punches too. I'll have to find out where to get some, because I'm not sure what brand they are.

I guess I need to work on my picture taking ability, too. Just bear with me until I find a spot with good lighting. I think part of the problem was that the paper has a shimmer to it, so my camera wasn't quite sure what to focus on. (it sounds like a good excuse, doesn't it?!?!)

First Post!

I've been wanting to start my blog for a while, but I couldn't figure out what on earth I would post. So...you might see some craft projects (old and new), recipes, book and movie reviews, and whatever else is going on with me. I made some really cool cards with punched flowers at card club today so I'm going to share those first. It's getting pretty late, so you'll have to wait for the pictures until next time!
